I got this last year and was delicious especially for the price. Sorry got the date wrong it's actually the 24th of August, ready in time for the bank holiday so I am a bit early. Really is a bargain though

This peasant. Sous vide it at 54c for 90 minutes then sear it for 30 seconds either side and finish with butter.

With the sear, close to medium rare. No need to rest, as that effect is carried out whilst cookinging using the sous vide method.
