I was thinking the same thing. Slow cooking really benefits cheap meat cuts, not a quality cut like that. It would be sacreligious ! lol

And also ruins a beautiful bit of beef. Seal it and max an hour in the oven and then when you have eaten it, make beautiful stock with the bones.
Absolute waste to slow cook it.

you & most of the other posters are missing one of the most delicious ways to cook a decent joint of beef or lamb then
put seasoned meat in oven - no need to pre-heat - blast it with 220C for about 15 mins - allows oven to come up to temperature quickly - then reduce to 50C-60C for 4 or 5 hours - remove to settle for 20-30 mins (covered to keep warm) - then serve - it will be beautifully pink & juicy on the inside but with a decent thin crust on the outside
