I have a kindle fire 10" 5th generation which I detest . Would this be a like for like kinda replacement? It's just used for browsing and the occasional document ?

On paper sure Intel say 2gb, in reality yes it has been provided with models sporting 4gb ram.
But no, there's no ability to upgrade ram in this device anyway.

The 3735 is pretty bad, I had one in a 7inch tablet and it struggled even then

Think that's the Z3745 or similar. The Z3735F is restricted to 2GB and the Z3735G to 1GB. But regardless, like you say, the RAM is almost always soldered on these thin and light netbooks.
