I would gently fry off some black pudding.....then make up some nice citrus dressed salad....add those to the beetroot mixture with fresh crusty bread as well.....SOLD.....I'm off to Iceland!

I tried it yesterday and it tastes lovely.. but I do enjoy goat's cheese, I know that's not to everyone's taste :smiley:

We had a couple of these over Xmas and they were well received. We're not vegetarian but served it as a side dish.
