My wife joined just yesterday so this is a day late unfortunately. For all those perfect people out there who have great diet discipline this no doubt is a poor deal but for those who really need the support of a group, a class like this can be lifesaving. Getting fat is easy alone but getting slim is easier with others. Good deal in my humble opinion.

The reason for a big increase in weight despite a seemingly normal meal is that having a meal after a period of dieting causes a lot of weight being retained in the form of water/glyocogen stores/etc. This is the same reason why most people lose a lot in their first week of dieting (half a stone plus is not unusual). There's a difference between weight loss/gain and fat loss/gain. You should not be disheartened by these fluctuations. Measure by body measurements, waist/thighs/chest/etc and don't be overly hung up over daily weight fluctuations. The overnight gain will be also be lost a lot faster when returning to a diet.
I think people being overly concerned by daily weight fluctuations is the single biggest reason for diets to fail. It's all too easy to think that you've dieted for a week or more only for it to be undone by one meal and if you have to live your life without being allowed one "treat" meal every so often then you might as well not bother at all. Stick to disciplined weekly weigh-ins (to ensure your diet/exercise plan is working) and if you do have any bad weeks convince yourself it's a minor bump and that it won't stop you reaching your goals.
