Much difference between this model and the HDR-1000S model £99 refurb deal recently?
Also I'm thinning of ditching sky. Is there any easy way to still be and to watch my recordings on the sky+ box, or coy them off in a watchable further, after I cancel?

The older Humax products did permit copying recordings to a USB stick. I think they've hobbled that functionality with their new products. Feature wise I think the Freeview vs Freesat versions are quite similar. With Freesat of course you do get a much broader choice, and picture quality - generally- tends to be better on Freesat vs Freeview as the latter is now getting very congested in terms of available multiplexes and the attendant need for increased signal compression. Somewhat similar to DAB where most channels now broadcast at 32-64kbps or lesser on the MP2 container (yep MP2 64kbps broadcasts in 2015!)
The advantage of freesat recorders is that they are cheaper, and if you're ditching Sky, definitely the way to go. As for watching after you cancel I seem to remember you can't , could someone confirm this please.

yep once your sky subscription ceases then your sky box effectively becomes a dumb box, just good for watching free to air channels
