Do most recent mainstream films that are sourced via France come with English language option? Am I correct in assuming they do as most will have been filmed in English originally?

Most of the time. Not always. You can check the languages on the packaging.
To save money on mastering and replication they generally like to put several languages on one disc in order that the same disc can be sold in several regions.

Picked this up on the lightning deals for £12.99 the other day.
Not as good as Band of Brothers in my opinion, Cracking price regardless.
