OK here goes. And just to forewarn you, several are multiplatform games but, in my opinion, play best on the Vita:
Tearaway - looks good, plays well, oozes charm and is one of the few that actually use all the Vita's extra features effectively without feeling forced.
Virtue's Last Reward - totally crazy puzzle/adventure/dialogue-driven murder mystery game. Deep and complex story with some really interesting characters and puzzles. If you stick with it it will really reward you.
Wipeout 2048 - if you've played a wipeout game you know what to expect, but for a handheld game it looks gorgeous and plays really bl00dy well.
TxK - another insane game, but this time an arcade shooter though not like any you've played before I'd wager (watch a video to see what I mean). It's incredibly challenging and, most notably, totally visually overstimulating. Not to everyone's taste but I absolutely loved it.
Gravity Rush - I didn't finish this one (mainly because it's really long) but it's a fully AAA, console-quality action adventure game with a really cool art style, some interesting mechanics (gravity shifting) and a hokey but robust story. One of the console's most popular.
Sine Mora - this is one of my favourites. Old-school style side-scrolling shooter but with a really cool art style, some majorly satisfying weapons and well-designed levels with varied bosses. Plus overall it's really, really tough and unforgiving. Some of the hardest trophies I've ever earned.
Rayman Origins - utterly delightful platforming game that you may have played on other consoles (and the sequel, Legends). Just looks and plays so well on the handheld.
Lone Survivor - kinda hard to describe, but basically it's a story-driven, retro 2D survival horror game. It's pretty dang scary with the lights off and headphones on and that, along with how the game progresses, can make you feel like you're going mad. Not to everyone's taste but I found it gripping.
Hotline Miami - brutal, gory top-down brawler that was gradually released on multiple platforms but looks and feels so good with the Vita's OLED screen and dual analogue sticks. Really challenging, but once you get good at it, breezing through levels full of enemies is so satisfying. Definitely recommend giving it a try if you don't mind the OTT violence!
Spelunky - notoriously difficult and punishing platforming game where you have to work your way through randomly generated dungeons rescuing damsels, whipping snakes and evading devious traps. You die really easily and when you do you're sent right back to the start, which can be infuriating, but again once you get good at it it becomes really satisfying.
Virtua Tennis 4 - yes, a tennis game. By no means my usual thing but I just couldn't put it down. It looks really good, the campaign mode is surprisingly fleshed out, the tennis mechanics work well and there is A LOT of content. Which is especially good since I got a hard copy new for £4.
Muramasa Rebirth - side-scrolling hack and slash game with a hokey samurai legend story, bizarre enemies and bosses and a gorgeous Japanese art style.
Guacamelee - another side-scrolling platformer, but with a really cool mexican luchador theme/story. The combat works really well and the level design and writing is top-quality.
That should do for now. I'm playing Persona 4 at the moment (many would agree it's the best game on the Vita) so can't give a full recommendation. Quite a few popular games that I didn't like might take your fancy (Uncharted Golden Abyss, Soul Sacrifice, Unit 13, Dokuro, Ninja Gaiden Sigma Plus, Disgaea 3). Also quite a few that I haven't played yet but I'm looking forward to trying, like Killzone Mercenaries, Touch My Katamari, Super Stardust Delta, Dragon's Crown, Fez, Metrico, Danganronpa, Stealth Inc, Sly Cooper and a few collected classics (Ratchet and Clank, Jak and Daxter, God of War). There are also a huge heap of PSP/PS1 games that you can play on the Vita. I've only played a couple (Resident Evil 2 + 3, Crash Team Racing and Silent Hill) so can't say they're all faithfully ported, but those certainly play well and are a real nostalgic treat. Not only that but you can remote play PS4 games!
All in all, the Vita is a gem. Criminally under-appreciated and misunderstood. To be fair Sony have failed to market it effectively in the west and just make no effort to raise awareness of all the great games available to play natively on it. I hope it doesn't die a premature death as some seem to think it will, but if it does, it will have certainly have given me a good run for my money.

Nah, not too good to be true. It's been around this price a few months ago (this post). Back then it was 100 euro I think, so technically not as low as it is now but since the euro rate is dropped, this is a better deal.
