The pain relief properties are easy to see for yourself, but is there any evidence that this actually improves tooth enamel in the long-term ?

It will "protect" tooth enamel from damage like acids in food and drink but it will not "repair" any existing damage done to tooth enamel.

Hmmm, not necessarily.
The fluoride will form fluorapatite which is forms a part of enamel.
The main 2 active ingredients are the potassium nitrate and the sodium fluoride. The latter is found in nearly all toothpastes. The potassium nitrate acts to reduce sensitivity.

I always wonder what makes Sensodyne different from the everyday toothepaste apart from the price? what ingredient do sensodyne use that others don't?

Its actually the complete opposite. It's what Sensodyne don't use, which would be SLS - sodium lauryl sulphate.
SLS is a foaming agent that is an irritant for sufferers of ulcers. Sensodyne is the go to tooth paste for anyone that suffers a lot from mouth ulcers.

This is the only toothpaste I have used that has made any difference whatsoever to the condition of my teeth, I've only been using this for a couple of months and my teeth genuinely do feel stronger, look a little whiter, and I have less sensitivity to hot and cold. heat from me
