There are a few projects that aim to do this sorry of thing. Googling 'Raspberry Pi Assistant' brings up an echo implementation, a google assistant, and a few own source projects.
Try searching around, see which is best for you. I'm sure there will be a way to stuff a GUI into one of them.

I have one of these and am pretty happy with it so far. Worth mentioning that really you'll want a project box of some description, especially if you want to wall mount it. The Pi sits very nicely on the back of the screen and the hdmi bridge connector is very neat.
