They actually have started selling bacon flavoured crinkle cut chips in asda! I got them last saturday & have yet to try them.
If these are not dyed and naturally purple then they should be very good for you. There is a documentary of a small island in Japan where the population live mainly off purple potatoes and all are in exceptional health due to the nutrients from said purple potatoes.

Purple foods seem to be a healthy eating fad food at the moment for whatever reason. Which is why i assume they came out with these. These are made from Purple Majesty potatoes, which are naturally purple.

Its because purple potatoes are packed with Polyphenols which are antioxidants.
Frying them though removes that benefit. You can buy Purple Majesty potatoes though from Ocado and some markets and do what you like with them.

If you like purple potatoes, Lidl are selling "Dragon egg" potatoes, which appear almost black, but when roasted they have an almost gold sheen on them. And when you cut them open, they are a lovely, deep purple! Can't remember the price off hand, but they're in a "mini foods" promotion where you get 20% off if you buy any 3 items!

There are much less in the cooked potato than raw but still significantly more than a white potato.
The higher the temperature, the more that will become denatured so boiling is probably best and roasting somewhere between boiling and frying.

IIRC wild type potatoes in S. America (their origin) are purple.

Allow me to educate you on this matter then :smile: The purple colouring in foods such as these are known as anthocyanins, these have a positive physiological component to the plant, meaning they're useful for the plant, and they have definite positive health effects in humans, the Okinawan diet (A Japanese island) with a large percentage of centenarians (people aged 100 years or more) contains purple sweet potato as a component of the diet.
Dutch growers in the 17th Century managed to cultivate them as yellow/orange and these lack the useful/healthy anthocyanins. So in fact our modern diet has reduced the consumption of anythocyanins and other useful phytochemicals.
So rather than being a fad it's actually rather good sense to eat purple food and in fact to eat a rich variety of varying coloured foods, this feeds the gut microbiome (bacteria in the gut) which science is now demonstrating have a significant effect on our mood, general wellbeing via production of useful chemicals some of which are butyrate, GABA and Serotonin amongst others.
