They are usually quicker then what they says about delivery time. Most of the places are OOS or around £70 so worth a wait I think.

If I have one with the console then buy a second one, does that mean player two would have two controllers to use or still be one each sideways?

You get 2 joy con with the console. (2 joy con make a typical full size controller).
When you buy more like from this link, you get 2 also.
So in total you would have 4 joy con, which can be used for 4 half size or 2 full.

So basically if me and my fiancée played together and I had two sets of these, we can both play with a full set? Or would be have to half one set sideways? Sorry if I seem a bit dosey just not sure how the console works and I'm getting one in July haha

Yes, you would both have a set each, if you buy the extra pair.
Simple terms:
In the Switch box = 2 half size controllers (which make a ONE whole)
In this Joy Con offer = 2 half size controllers (which make ONE whole).
You can also buy individual Joy Con, (good if you lose/break one), which you need to be see which side it's for, Left or Right.
If you and your fiancé want a whole/full controller each, you need to buy both.
However, a lot of multiplayer games out don't need a full set per player.
