I understand how they work, but I see very few uses. Also, using these with hot water will reduce the temperature of the water; less water, more gas!

Because not all water is used in filling up a bowl. Aerators mix the stream of water with air to reduce the flow of water. This is how it reduces water consumption. It also reduces splashback as it directs the water stream to prevent those high pressure jets of water you get with unaerated taps.
