Followed a Nigella recipe for Goose Fat roast potatoes on Sunday using this and they were fantastic, no thanks to her wishy washy "they should take an hour but they might take 25 minutes" cooking time. Going to stock up to do more "tests" before Christmas.

I always put the potatoes in before the meat. Time is the huge deal, not temperature. If you try to rush them they get that fried finish rather than crunch and crumble. Boil them first in salty water - not to a mush, clearly, give them a shake to roughen them and then let them stand for a bit so the steam comes off them and the surface dries a bit. Them put them in with a decent amount of fat so they're 'paddling' with the temperature medium high. Half an hour/forty minutes before the end then drain almost all the fat out of the pan - that's the major thing that makes them really crunchy. Your meat should have been in the same tray at this point and hopefully released some gluey juice that'll soak into the bottoms and become this wonderful umami base.
