What about skyrim - or would I need to install a graphics card?
If so could somebody kindly recommend an appropriate one to upgrade this machine?

You would need a graphics card, but the PSU supplied is pretty cheap and not the best quality
I would get something low powered like GTX 750 TI, GTX 960 or 1060 (depending on budget)

No you wouldn't. You couldn't run it on high but it would work and why recommend a 1060 that nearly costs as much as the entire PC and would require a different PSU.
Bottom line, it can run Minecraft fine, Skyrim on low settings but you'll be pushing it and if you're getting into the realms of PC gaming it's best to save up a bit more.
