I've given up ordering steaks in pubs! Cooking a steak is an art, too many spotty teenagers in the kitchen with no qualifications calling themselves a "chef" The steak needs to be at room temp before cooking and left to rest for a minimum 10 minutes before serving. Otherwise you will just get a lifeless, dry steak with no flavour.

We did to make sure that they have the steak in stock, but we also found out ours DOESN'T accept vouchers. So to save yourself a trip, give them a ring first.

After seeing how these animals are kept and then butchered... I became Vegan. I'm not against eating meat, but it's all so intensively farmed, we're eating far too much of it that Animals are now just treated as dead objects. Then you see how the Chinese do it and it makes you want to nuke them off the planet, on a whole other level of cruelty. Sadly though people don't seem to care, even though it impacts their own health as well, animals are pumped full of antibiotics and growth hormones and so you're eating that too.
All we have to do is go back to the pre WW2 way of eating meat, where it was something special for the family to share, not something that's more common and cheaper than sweets...

I don't think the room temp and resting thing is a myth - although I rarely leave mine for 10 mins - but that may depend on how you cook it. I imagine that you can do what you like with a steak that's well done. With rare I find that cooking from room temp and resting the steak help. Also, you can drizzle the juices back over the steak or add to some fried onion.

Steak does not automatically equal beef, so your argument is not valid.
You can get tuna steak, salmon steak, lamb steak, pork steak and many others..

Taking the steak out the fridge an hour before cooking barely affects the temperature of the raw steak. Resting is open to more debate however the slight benefit to resting is offset by the many disadvantages, primarily being actual eating temperature. By the time you serve up and get to your plate is usually a few minutes and as most people eat from the outside in, the juciest part of the steak has rested for long enough. Factor in an actual resting period of 10 minutes or so before serving up and your steak is lukewarm at best when you get to the middle.
