8 to 10 hours in a slow cooker and then a quick dry fry off to crisp up the pork a little and into a sarnie with some hot sauce...perfect.

They are very good the Morrisons Butchers at my local store, they cut the rind of my shoulder joints and retie them and then weigh and charge me after that. They have pieces that go up to the 4kg mark in their fridge behind the counter as well. Was going to pick up a full rack of ribs from Tesco to smoke on Monday, may have to smoke some of this instead with a vinegar barbecue sauce and Monterey Jack Cheese melted over the top of it once pulled, with a homemade slaw and Brioche Burger Buns..

Perfect for pulled pork!
Cut off the layer of fat and stick it in the oven to make crackling.
With the lean meat cut it roughly and brown in a a pan with onions and garlic. Add paprika, and a generous amount of bbq sauce. You can add chipotle paste at this point to. Then add just enough water to cover the meat and cook in a pressure cooker for about 45 minutes, pull the meat apart with a fork - sorted!
