I used to only have wholegrain pasta until a few years ago when I read about anti-nutrients in unfermented grains and decided white pasta was probably a healthier option....

Absolutely, the source I have with the white pasta lowers the GI of the overall meal in the same way as whole grain would, without the complication of anti-nutrients.

Evidence?
Most of the antinutrient stuff tends to be pushed and exaggerated by the paleo diet industry. Antinutrients are naturally present in many foods however the dose makes the poison. You wouldn't avoid eating an apple because of it's antinutrient content. I don't think a single government or health organisation in the world recommends you stop eating whole grain pasta.

As with many things in life, my food choices aren't purely driven by evidence. If only it were that easy....
