Birchwood Farm is a Lidl BRAND name and NOT the real name of a farm here in the UK.

Just like Tesco with their fruit, veg and meat, Marks and Spencer with Oakham chicken. They all do it.

Stick " farm " on anything and the sheepeople will buy it. eg Heinz Farmers soup
Check out Morrisons for their butcher counter steak mince. On offer at £3.92 per kilo from £8 at the moment. Very decent and comparable to 'proper' butchers mince IMHO.

I've always wondered how they are able to offer steak mince at less than £4 while the actual steak is more than double the price.
(For example diced chicken breast is always more expensive than whole chicken breasts)
Is the steak mince made from the bits that they cut off from the steak?

20% fat is pretty high, go for more expensive 10% fat meat and the results are much better

Unless you are BBQ'ing then accept nothing but 20% fat.

That's pretty much nonsense. 20% fat in a minced beef is absolutely ideal for burgers if you want them moist and juicy. However, I wouldn't use this particular minced beef from Lidl. At £2.50 a kilo, God alone knows what's in it.
