I like the tins you get in B&M/Home Bargains. They're just the gravy without all that fruity muck. My recipe is: Saucepan/tin/frozen chicken thighs/45 minutes/boom!

Yes. As long as the internal temperature comes up to 75c and stays at that for long enough it's absolutely fine, and that'll happen in 45 minutes no problem. The only drawback is that the skin isn't crisp so either throw it away or learn to like it.
Defrosting isn't necessary if the cooking method doesn't let the meat stay for a lengthy time in the the bacterial growth 'danger zone'.
