The salt softens the water. Without salt, you would start to get limescale deposits in the workings of your dishwasher which would make it work less well and ultimately kill it. All-in-one dishwasher tabs - most of them - contain salt, so in theory, you shouldn't need to add salt. In practice, it's best to do so, especially in hard water areas.
