I dice up a whole pineapple after removing the core, put it all in a casserole dish with a tiny amount of sugar #30g (personally I actually use Canderel Sugarly as we're on a low sugar diet at the moment) then i make up the crumble mix with Sugarly or Golden Granulated sugar and pop it straight on top of the raw pineapple and shove it in the oven for 30-40 minutes until it is golden and crisp on top.
Serve with your choice of cream/custard or ice cream :smiley:
