The last weekend before Xmas. Traditionally the weekend for work Xmas do's and when the pubs and clubs are heaving in the UK.

The hotel is the 4* Mercure Amsterdam City. It is ideally placed for using public transport and getting to and from the airport.

My daughter went to Amsterdam with Easyjet and was charged £70 each way for luggage so I am presuming this doesn't include luggage apart from 5kg hand luggage?

She can't have been charged based on weight restrictions as Easyjet have no limit on weight restrictions for hand luggage just size. The size measurement restrictions are all over Easyjet website so to be charged £70 she must have had a large size hand luggage. The no limit weight restrictions with Easyjet mean you never really need to take hold luggage, especially for this deal, 2 nights in Amsterdam.
People are too quick to complain about budget airlines when if you read the rules regarding boating passes, luggage etc you shouldn't have problems.
The following is on their website:
easyJet Hand Luggage Allowance. Each passenger is allowed one piece of hand baggage on-board. The easyJet hand luggage size is 56 x 45 x 25 cm, including the wheels and any handles. There is no weight limit on cabin baggage.

It always bugs me when people book budget flights and then expect premium service.
