I have had very good results with the cheap fruit trees from Aldi and others. Look after them the first year and they will grow into nice trees and save you a fortune compared to garden centre prices. For the apple trees - go for the common varieties of apple you can buy in the shops, such as discovery or golden delicious. I have found these grow better than the posher apples such as James Grieve etc and the apples taste better too!
