Not really authentic but this is how i do it in around 5 minutes !!!!
Ingredients:
1. Cooked rice ( cold) from the fridge (the cooked rice is made from 1 cup of uncooked rice the night before )
2. Cooked Peas 1/2 cup . Could be frozen or fresh. Cook peas in the microwave ( 2-3 minutes)
3. Groundnut oil 2 tablespoons
4. Eggs ( 2 eggs) ( if you want to make egg fried rice)
5. Soy sauce. (I always use Kikkoman soy sauce) 1 -2 teaspoons
6. Sesame oil
7. Salt
In a pan on medium to high heat add groundnut oil and wait till its sizzling. Drop in the peas and stir for maybe 10 seconds
Now add the cold cooked rice and keep stirring. Once the rice changes colour slightly then add the soy sauce. Keep stirring often as the rice gets burnt if you do not do it .
The soy sauce should be mixed very well with the rice as it gently turns into fried rice. Taste in between and add more soy sauce or salt if needed ( You have to be careful with the salt as the soy sauce is quite salty anyway)
One the rice is done Add 2 or 3 DROPS of sesame oil to the pan. Mix well and stop cooking.
Tips:
1. the trick is to cook rice the night before. The rice has to be cold from the fridge for the fried rice to work well.
its great for using up leftover rice.
2. Use groundnut oil
3. The 2 or 3 DROPS of sesame oil added in the end will give it the takeaway Chinese aroma, Don't add any more as it over powers the dish
4. Add scrambled eggs ( eggs scrambled with some salt and pepper in another pan) just before you finish cooking for egg fried rice. Most people like to scramble the eggs in the same pan. However I feel it makes the eggs too dry by the time the rice is done and therefore do it in a separate pan. You can also be creative and make a thin omelette in another pan and cut it into strips and decorate the rice in the end.
5. You dont need to add peas. I just add it as it gives a bit of colour and its a good way of getting some veggies in.

Yeah, pretty much what I do, but (for two people) I also add 1/2 tsp of sugar, 1/2 tsp MSG and a few shakes of white pepper. I also make a well in the middle of the wok, crack the egg directly in and stir it while the rice is almost done.
I haven't gotten a Chinese takeaway in years after teaching myself to cook most of it - so cheap once you have the base ingredients !:smiley:
