Just to put these prices into perspective i fly to HK 3 times back in 2005 and paid £320+ and now after 11 trips under my belt im now normally paying £550 + using opodo.
The best time to go for the weather was normally nov- april although the winters have been coming to HK later for the last few years so December+ is a better bet.
Also HK is amazing at Christmas as the light displays outshine anything here,i personally have spent 9 Christmas's,new years & Chinese new year there and find any other places boring in compassion. Its also a great way to get away from the relatives and all the gift buying guff.

Allow some good time between connecting flights though. The airport often has capacity issues which means you stack to the west for a while.

Flying to Asia later this year and Turkish Airlines is looking like the best option - I have 2 hours 20 mins between flights or there is a 7 hour option. How much should I allow? Thanks

They're a great airline, and security in istanbul is far greater than in the UK. You need to go through airport style security just to get in a mall, and it's stricter at the airport
