You should never grind a knife. The localised heat causes annealing to the steel making it softer.
You must hone a blade and it will retain its hardness and sharpness for much longer.

I have one of these but may get an extra one to run some wire \ buffing wheels. At this price its a bargain and saves messing around changing wheels around.

It's unlikely to have enough power to be very useful with a buffing wheel to be honest. A 1/3 to 1/2hp motor is about right for a 6inch wheel.

Yes, they are perfect. You can also sharpen garden shears, scissors, mower blades, etc.

You'd be better getting a cheap diamond stone and honing the blade. As OrribleHarry stated, the steel would overheat and ruin your knives.
