From what I remember, the first number is the viscosity once warmed up and the second when cold.
Lower numbers means it warms up quicker, but too low and it will get past seals meant to prevent that; not good for your engine/turbo.
Just use what your manufacturer recommends.

No the first number is the viscosity when cold the second is the equivalent oil viscosity when hot. The aim is that the viscosity remains the same at all engine temperatures. Nothing to do with how quickly it warms up.

In a 10w-40 for example the 10w bit (W = winter) simply means that the oil must have a certain maximum viscosity/flow at low temperature. The lower the "W" number the better the oil's cold temperature/cold start performance.
The 40 in a 10w-40 simply means that the oil must fall within certain viscosity limits at 100°C. This is a fixed limit and all oils that end in 40 must achieve these limits. Once again the lower the number, the thinner the oil: a 30 oil is thinner than a 40 oil at 100°C etc.

Check the spec required, if it's a VAG (VW, Audi, Seat, Skoda) diesel under no circumstances use anything that is not certified to the correct grade. You will suffer cam lobe wear and it will be expensive to replace sooner rather than later. They also have a specific revision for the versions fitted with a DPF - again check the required spec eg 507.00 etc.
That said my RAV D4D is quite happy with 5w30 Ford spec fully synthetic as was the Yaris, this has been £10 previously but they changed the packaging, the Yaris was over 120k when I gave it away and the Rav is just over 100k now. Decent oil for very little money, just make sure you get oil certified to the correct standard for your car.

Can someone tell me the difference between the Halfords 5W30 Fully Synthetic VW/Audi Oil 5L and the Halfords 5W30 Ford Fully Synthetic Motor Oil 4L? I sometimes wonder if it is a marketing ploy?
I also notice that for a VW Polo 5W30 is advised for variable service and 5W40 for fixed. Again, are there dangers with topping a 5W30 with a 5W40?

It's not a ploy. There is far more to an oils specification than just the viscosity, and all major car manufactures have their own oil specifications for various different applications (petrol, diesel, extended service etc.). You need to check the manufacturers specification code for you car, and see if one of these oils complies to that specification (spec numbers are printed on the oil containers).

The oils are made to a certain specification, Ford oil is made to flow through the pin holes in hydraulic tappets in zetec engines for example, I own a Hyindai with a pretty straightforward petrol engine so either the Ford or VW oil would do fine for me.

From halfords maybe , but yeah buy 2 and get 8l for the price of about a 5l at best. I just regrettably got a 5l of comma just for topups for £18 and they're apparently also made made comma.

The manufacturers specification can be extremely important for some engines, e.g. the VAG PD engines require a very specific oil and using the incorrect oil will cause expensive damage. Also any diesel with a DPF requires a low ash/low sulphur oil.
