Persimmon cake is very nice too if you look them up on the internet there is lots of nice receipes I will be making one.

yes the whole thing just remove the green stalk like you get on a tomato or strawberry, if there is dark patches or spotty bits inside thats normal.

Just be cautious, years ago -before they were called Sharon fruit- they were delicious, but,big BUT, the skin was inedible, can only call it highly tannic. Probably bred out of it now.
