If you mean does that eBay seller still sell NFC-enabled EE SIMs, probably. See eBay item 181908983541. You might want to ask the seller to confirm they are NFC SIMs before buying if that's something you care about.
EDIT: I just bought another SIM from ee-uk-shop and that one isn't NFC-enabled. So definitely check before buying if you care about NFC.

By the way, in case anyone cares...
The SIMs in my local Poundland are the non-NFC type (you can tell because there's no N after the SIM serial number on the card). But the couple of with-£5-credit SIMs I bought from eBay seller ee-uk-shop back in April are NFC.
[Maybe in future some apps will make use of the NFC feature. There's EE Tap Wallet for example, but EE only let that work with pay monthly SIMs (and certain specific phones) at the moment.]
Text ADD DATA to 150 to get a list of data add-ons. I just did that and got this message back:
"For £1 add 100MB data that lasts up to 7 days, just reply 100 MB WEEK to 150. For £5 add 500 MB data that lasts up to 30 days, just reply 500 MB to 150. For a full list log on to My Account."
Unlike packs, add-ons don't auto-renew.

Providing you have disabled any pack, credit should not drain of its own accord in a smartphone, because with EE SIMs you can only use mobile data if you have a pack or an add-on.
Assuming you want to use the SIM in a mifi-type unit, can't you just put it in that, then using your PC browser go to http://add-on.ee.co.uk/status to see your current data (should be a 50MB get-you-started allowance if you stopped the pack using your dumbphone). Then go to http://add-on.ee.co.uk/purchase and you can buy a 500MB 30-day data add-on for £5 once you've used up the free initial 50MB.

Can anyone explain - it says £5 credit valid till Aug 2016, but then "£1 gets you.... for 7days"
How long does the credit actually last?
I imagine it means the £5 can be redeemed anytime up till next august, but 7days seems to be awful short to use it.
I'm looking for a sim I can retain credit on as a backup.

The sim is pre-loaded with £5. £4 available to you to spend as you wish and £1 will be automatically deducted when you insert the sim for a pack that costs £1, last 7 days and gives you a bunch of mins, texts and a tiny amount of data to get you started. Text STOP PACK to 150 to stop the automatic renewal of this pack; if you are lucky and you do it with no data switched on, you might be able to stop it from activating altogether. Last time I tried I managed to keep the whole £5 credit.

The sim is in a dumbphone because otherwise all the money will drain out and disappear. The phone is not able to get to the internet to get to an account online. There will never be an account online because I see no reason that they need know of my existence simply to get the sim to work in a mini. The old three data sims from amazon never used need to know all about me to use them (before they went up in price by a factor of 52 times more expensiveness). The only means to get a data situation on the EE sim is to use SMS to send some sort of message, but the EE website hides any information regarding a £5 for 30 days result.

I'm not sure what you mean but there are packs and add-ons... packs get renewed automatically, add-ons don't. I am on EE PAYG at the moment and just use the 100MB for 7 days add-on. You go to the add-ons section on the app on the phone or logging in into your account online and purchase it. It's quite simple really.
I much prefer EE to Vodafone etc as they have more flexible add-ons. On Vodafone I was forced to spend at least £5 to have some data. 3 is good as well (3-2-1 tariff is unbeatable for low usage), but for PAYG I'd avoid Vodafone, O2 and Virgin.
Calls and texts on EE payg with no dedicated add-on or pack applied are expensive mind you.

As others have mentioned, stop the pack by putting the SIM in a non-data-capable phone (e.g. the old Nokia 3310 you have in a drawer somewhere), then texting STOP PACK to 150. Or, disable mobile data on your phone before turning it off and putting the SIM in it.
I think the £5 credit applies as long as the SIM is first used before the date shown on the label.
These SIMs may also have a 50MB get-you-started data allowance. You can only use that though, if you don't use any data from the pack before stopping it. You can check by going to http://add-on.ee.co.uk/status

I have previously tried to order multiple sims from the same shop on Amazon and had the order cancelled due to this 3 month rule

In relation to the power bar I think that service has well and truly been finished. Only some power bars were affected yet EE suspended the entire swapping service 'until its investigations finished'. Why? if only one batch was affected these could easily be removed from the swapping service whilst allowing others to continue.
Perhaps they realised after all that the whole idea was a pile of pants and not making it any money whatsoever!

Yes but it will be at international data rates, which may mean its just not worth it as its £3 for 50MB (valid 24 hours)
I used a three or O2 sim when I leave the UK, but moved my spare phone to Freedom POP as they give you 200MB free on the Three network that should be able to roam for free. If you want to PM me an email address I can send you an invite that means we both get a bit more data than the standard 200MB a month Freedom pop give you for free,

Should be able to, and if you use a non data enabled phone you may be able to sent the STOP PACK to 150 before the first pack is used so get all £5 credit from it. Sometimes work sometimes not.
Remember also for a 35p text you can get a power bar when they resume that service...
