I don't quite get retailers sometimes. The whole point of venison is being a lean game meat and they end up adding beef fat to it! Maybe it's because these are tasteless cheap cuts / scraps that they are recycling into burgers and they add the extra fat for flavour..

It's (naturally) very lean - not ideal meat for burgers, sausages etc. Any recipes I've seen always say to add streaky bacon or some other fatty meat (kinda defeats the purpose, health-wise). I prefer to buy premium cuts (loin) and just pan fry - or put cheaper cuts in the slow cooker
