We always get this brand, and it makes an awesome Thai green curry. Often you open a tin and half of it is absolutely solid. Tastes fine to me regardless of whatever % it is.

It's a different thing, though: "coconut milk" sold in cans is the ground flesh suspended in water. As noted above the percentage varies enormously. "Coconut water" is the clear liquid you find in the middle of a coconut when you open it.
