Note, this is just the base game but you can pick up the season pass for £19.99 so £29.99 for the game and all expansions all in, still cheaper than the game of the year edition.

You can pickup the Season Pass for £16.99 on eBay here, making this £26.99 all in for the game and all future expansions.
Is it better to get this or wait for Dark Souls III - The Fire Fades Edition when that goes down in price?

You can get the season pass for £16.99 on eBay. I bought it for that price a few months ago and it's still there if you get on with the base game!
Nice find, season pass is only £19.99 too for those who don't want to dive right in at the higher price. I'm guilty of buying goty editions and never playing the dlcs

How much extra gameplay is there? 10% 20 % etc?

The GOTY edition includes the base game and both expansions. (Ashes of Ariandel and The Ringed City). The first DLC is fairly short, probably 3-6 hours game play depending on how fast you go through it. The second DLC is much longer at around 10 hours on average. The second DLC is probably some of the best content released for a souls game.

£28.95 at minute . If you are definitely going to buy the DLC prob be better buying this for the resale/trade-in value .
It really is worth buying the dlc too as it's a cracking game .
