Tempted to get into these games, as I have never played these before. Which one do I start with?

They're all interconnected. Hard question, I'll step aside.

In release order. 1.5 which is 1 and 2 others, then 2.5 which is 2 then 2 others (both sets are bundled together. Should still be 24.95 at simply games) then go to this, 2.8

You can get all the games with 2 compilations now = 1.2 + 2.5 and 2.8
The order you should play the games in is as follows:
Kingdom Hearts 1
Kingdom Hearts RE: Chain of Memories
Kingdom Hearts 2
Kingdom Hearts 358/2 Days (semi optional only expands on KH2 backstory, available in movie form)
Kingdom Hearts : Birth by Sleep
Kingdom Hearts: Re:Coded (completely optional, no important plot elements, movie only)
Kingdom Hearts Dream Drop Distance
Kingdom Hearts χ (Semi Options, Movie only)
Kingdom Hearts 0.2
Be thankful you can play these all in 2 compilations on a single console. Up until these remakes (some of which are even remakes of remakes), you needed to own the following to get the full story:
PS2
PS4
PSP
GBA
DS
3DS
Smartphone
Wouldn't be so annoying if so many of the 'side' games had important plot elements in them.

Ah right. Fair enough. Still added heat anyways

I don't really follow what's going on with these Kingdom Hearts games with so many releases (who does?!) but is this just KH 2 and KH 0.2 Birth By Sleep? Because for just £3 more right now you can pick up Kingdom Hearts HD 1.5 and 2.5 Remix for the PS4 on Amazon, which has these two games plus 4 more (including the first main KH game)... seems a better deal to me? But like I said, I'm sort of confused by what's going on with all these games anyway so I may be missing something here.
2.8 differs from the other compilations because it contains a completely original game in 0.2 (albeit a very short game at 4-6 hours). and Kingdom Hearts χ Back Cover was a movie made from scratch (rather than recording cut scenes) based on a game never released in the West (KH unchained diverges quite a bit from it).
The changes made to the forced character swapping in Dream Drop Distance also apparently improve the game a lot more.
I think ultimately the goal with KH 2.8 was to ensure that you could actually get the whole story to the series on a single console, even if it represents poorer value than the other compilation. Kingdom Hearts has an insanely complicated story for a series about Disney characters and you can't even afford to skip most of the side games if you want to understand it.
