Wood doesn't hold on to germs - quite the reverse, it has natural antibacterial properties. Wooden chopping boards are safer than plastic ones for this reason.

I wouldn't worry too much. There's a lot of wooden implements in mediterranean and asian culture, and they tend to live a loooooong time. Maybe don't grate too much raw chicken into it. :wink:
