The plum ones have to look something like when the come out of the can. all the wonky/half ripe/half over-ripe stuff ends up as chopped tomatoes. Also, keeping them whole means they keep their flavour better in the can.

A word to the wise ... only ever buy canned PLUM tomatoes. They're of a better quality than the chopped ones. :smiley:
