Bake it whole and serve it has a centrepiece. Much better flavour cooked on the bone. Freeze any left over meat for sandwiches or adding to scrambled egg. Must be breakfast time, my mouth is watering :smiley:

I purchased a salmon from them previously and when I got home I was horrified to find it was cross eyed. It's tongue was a little lop sided too and I suspect that it may have had a lisp when it was alive. Disgusting.

I work on the counters, yes we fillet, steak, portion, De-bone, de-scale etc all free of charge.

Sorry, but it's a lots less; I have checked it out several times. Its usually about 450-500g per 2.2-2.5kg fish, so about 20%. The smaller the fish the larger the percentage.

Then your filleting needs to improove. When I worked on a well known northern fish and meat market if I was getting any less than 66% saleable fillet I'd be sacked or roasted by the customers. You're correct about the fish needing to be mature but who's going to buy a immature salmon. Some round fish like cod will provide less as the head is large in comparison to the body.

Apparently so. I just looked at Tesco site - you could have done so!
Bought my salmon in branch; best to get there early as not many left today and all under 2kg. Assistant offered to debone it etc if I wished - but that is my wife's job!

I usually ask them to remove head and bones (2 salmon sides) and get the weight thereafter.
Usually works out to just under £7/kg
