Hell yes! Most cheeses will last longer than this, in the case of Edam, a couple of weeks. If you do see any mould, just cut it away.

I picked up a ball of this from Sainsbury's Deli tonight. The person serving me stuck a sticker on it so that the price and barcode were marked on it, however, it says on the sticker to use by 23/12/16. That is only two days, surely the ball would last longer than that once cut wouldn't it?

You can cut it into halves or quarters and cling film wrap each piece and keep in the fridge. Then just use one piece at a time. That will stop the cut surfaces drying out and becoming hard.
