You can only double up £20 (£40) per category, however there is no max to how many points you wish to redeem.
Some of the categories in the double-up at Sainsburys often have other discounts - eg 25% off Tu clothing (due shortly after the double-up finishes) or wine 25% off 6+ bottles (finishes 13 Nov). Other categories - eg toys - may not be competitive with Argos/Tesco/Amazon. And surprisingly, individual promotions on the double-up categories tend not to run.
If you can use the eBay credit, that would be how I would convert my vouchers. You can buy what you want, when you want it rather than having just a week to spend.

Just checked my Nectar point statement and they've took the 2000 i redeemed but not added the 1000 i should get back. Any ideas when they are supposed to be added?

When I login to my eBay account and check the Nectar section, it says 1000 points awarded on 7th. So hopefully should be in our nectar account later today
