I used to work for a company that supplied party food to M&S (It was better quality then ; but i would say that) and the production process is so difficult so in order to get the volumes required most of it is produced in the summer, frozen and then defrosted in a controlled environment to be sold as fresh. The funny thing was that it was never economic for the supplier , the staff were extremely busy from November to Christmas Eve and then paid off, but the company never made any money and don't do it anymore. But we did have enough garlic bites and vol-au-vents to last the rest of the year.

I only purchased the following : Belly slice squares £ 3.50, Breaded prawns £ 2.50 and hot & spicy chicken breast chunks with a smokey chipotle dipping sauce for £ 2.50. Not that many to choose from in Devizes M&S but most seemed to be £ 5.00 when full price like quiche squares etc. Although the store did not have any of the higher end party stuff apart from the belly slices and Hog roast on crackling plates, this range tends to be £6-8 per pack before reductions/offers. Hope that helps.
