I agree, better than butter for making sponge. Makes a great lemon loaf cake too, and the stork empire biscuit recipe on the tesco site is fab. You can also substitute hard stork in these biscuits if you want to make them vegan (but obviously don't use jelly tots if you do!).

Butter is poor at air retention and you can't aerate liquid oil.
