500GB isn't really a whole lot nowadays for consoles that require to install the games on the HDD and plus any additional patches/DLC. Thankfully, you can plug an external HDD to fix the issue of storage.
Btw, hope that Nintendo won't require to install games on the HDD like PS/Xbox do now. I love the simplicity of inserting the disc and play!

Think the Nintendo switch/NX is cartridge only. Which means no massive downloads. Will be fine. Only downloads if for potential updates (will be small) and downloadable retro games from the usual library. Pretty certain you won't ever need an additional hard drive.
