if buying to store (any flour), freeze it for 48 hrs to kill off any dormant (or live) weevils.

great price OP good find. I buy it all the time to make traditional wheat-rye bread where I mix strong white flour with this rye flour 2:1 example 400g/200g. it's also good for sourdough if you have some time and patience.

Rye is very high in fibre and antioxidants. not a lot of gluten so use specific Rye bread recipes or mix with strong wheat flour

It's great to add about 10% Rye to a white loaf to get more flavour. Look up a recipe for pain de campagne, that uses Rye and is one of my favourite breads
