Found on both mine and my wife's Amex Platinum Cards. Will use for flights direct from Glasgow > Dubai for £419 each in November
As mentioned in the OP I don't see any additional links to sign up non Amex issued cards.

I am genuinely wondering after all the recent changes to the cashback rates if its really worth paying the 25 quid a year for the card fee or just switch to the free everyday card - thoughts?

I took the fee card for the first year when it was effectively free (Quidco covered it) and then switched to the free one. You actually have to close the fee one and apply for the free one as a new card. At that time I got another 3 months at 5%, I'm not sure if they've tried to stop that - worth a shot.
Work out how much you spend on average and how much you'd earn with both (after the fee on the first card of course).

I've recently taken out an amex platinum cashback everyday card, I have registered it but am not seeing this offer (or any offers) under the offers tab in my account. Hoping to book a couple of flights with Emirates soon, have I missed out on this or does anyone know if theres a way I can get access to the offer?

I think it can take up to one billing cycle before offers start to show. I'm afraid it's doubtful this one would appear for you now. You could always call Amex and ask, probably a long shot.
