Stainless steel apparently. I've seen a few articles suggesting cooking with aluminium can pose health risks, alzheimers for one. It may or may not be nonsense, but until it's known for sure - I'll keep using stainless steel.

Don't panic about Teflon, the amount absorbed by humans is far far lower than the amounts shown to cause problems in rats.
Ditto aluminium, there is no good evidence of a link with Alzeihmers despite claims.

Thanks for the link (and for showing signs of civility and education - unlike Stubee) but I don't really see it as an indication of safety.
It admits a number of possible dangers, but tries to mitigate them by saying that if you always cook with a perfect pan on a perfect temperature you'll probably be ok. Not very realistic, and the whole article is a bit wishy washy.
Note that the article I linked to discusses results of clinical trials by du Pont themselves. Whereas the one you linked to appears to have been written by a student. Can you guess what sort of company this student hopes to be employed by? And how that might influence the intended conclusions of her article?
I wonder if du Pont's large contributions to the US government and their FDA have influenced the decision to classify these materials as safe.
