No. The ones with a Steam logo redeem on Steam; the ones with a uPlay logo redeem on uPlay.
You can manually add the games to Steam once installed.

There is a GOG version of Rayman Origins maybe they included that.
None of these is probably really worth infecting your system with uplay. Plenty of deals on older pc games these days.

It entirely depends on which platforms the included games are available through - sometimes these include DRM-free options, other times not. You need to check what's available each time.

From my own experience, the DRM they use is not as clear cut as Steam.
I remember trying to play Splinter Cell Conviction. Purchased it on their store, launched the game and it said that I didn't own the game.
They use to force single player games to have a constant internet connection. If it dropped, you could lose your progress (not sure if they still do this).
There's also the fact that if you bought the original Ubisoft game on Steam, they force you to launch Steam and then launch UPlay in order to play the game.
UPlay itself feels very basic and light on features (which is not a bad thing) but it still all feels clunky and buggy.
Bear in mind that I haven't touched it since Splinter Cell Conviction.
