If I could figure out how to get windows 7 on it, this would be an absolute no-brainer! someone has (almost) managed to shoehorn Linux Ubuntu (Instructions here) but it still looks a little way off being 100% functional.

More than likely.
I don't use mine for much other than web browsing and a bit of MS-Excel/Word... but I do have Steam on it, and it has played Stardew Valley without any issues.
Another benefit is that it has an HDMI output on it... so with the touchscreen I have it hooked up with AlbumPlayer, running music videos and second monitor outputting to a projector in the garage... resulting in LEGENDARY parties.

Windows 7 is packed full of security problems, its now prob the worst version to use.. Windows 10 is a fantastic version of windows, why wouldn't you want to use it? and windows 8.1 is pretty much fine too.

I have a miix3 which is very similar specs to this. I have Windows 7 starter running inside Windows 10 using VMware Workstation so have the best of both worlds. Not much drive space left though, about 8.5gb.
The reason I did this is because I couldn't get my Op-com car diagnostic device to work with Windows 10 no matter what I tried. Plus I didn't want to give up windows 10 as I like the way it starts up quick. Op-com works fine with Windows 7 this way and I still get to keep Windows 10. Windows 7 doesn't support touch screen. Strangely enough I couldn't get Windows 7 to work my ELM 327 which i use for our Ford but that works fine with Windows 10.

i agree with you, although the forced updates on windows 10 can mean the 32GB gets used up very quickly

Long shot that I am sure you have already tried but have you used the win 7 compatibility option when installing?; this got round a few problems installing/running software packages for me.

Yes I tried that but thanks for posting. I think I may be able to get around it but at the time I was trying the compatibility feature didn't work. I also tried selective start up where you can request drivers are not digitally signed. It made no difference. I had it working on my macbook pro with windows 7 and VMware Fusion so thought the easiest thing to do would be the same on the miix. Took me a while to find the right virtual client but VMWare is the best that I have tried. Only issue was the 32gb drive on the miix. It had a bit of junk on it and I only had about 6gb spare so tried it with XP first. That wasn't right. It was very slow, buggy and the resolution was all wrong so I floored the miix with a fresh install of 10, loaded VMware and the windows 7 starter or basic so not to take up to much space.
Problem I had then is I tried for a while to get the op-com driver to work. It was working perfectly on the mac but not with the miix. I created a new usb port for a serial converter using an ftdi driver and then loaded the op-com as a portable device in device manager and used the serial converter to run it. It works. This was the only configuration I didn't use for windows 10 as I had tried everything else. Lots of people have problems with getting op-com to run but think I understand how it works now. My ELM 327 and Delphi diagnostic units find the driver easy as they use an executable programme which sets it all up automatically with installing the software and drivers and setting the driver up with the device in device manager. There seem to be some clever guys out there who know how to make op-com work on windows 10 but they appear not to want to pass on their knowledge. I will suss it out eventually and help anyone who wants to know. An oil change for my car costs the same as the Asus (£129.99) which is how I got into all this in the first place lol.
