Absolutely freeze it, I generally buy at least 4 when they go on offer and just defrost the day before I need it.

I did last time they had them. I had to smash through the bone with a cleaver which I hit with a lump hammer because my hacksaw wasn't here. Had some this weekend and it was lovely. Weight was about 2 kilos each I'd guess.
I crisped up the skin by holding it with a tongs in a dry pan before roasting as each piece took under an hour. Really recommend that. Unless you're like my gran who would put it in on a Thurday for a Sunday dinner and you'd get this fibrous husk that looked like something from Bodyworlds as your dinner.
