Generally good quality. When you have cooked it, wrap it in tin foil, a towel or two and leave it to rest in an insulated box for an hour. It will melt in your mouth when it comes out.

Got myself a nice 2 & a bit KG joint, Just over £8. Going to roast it fast for rare silverside. Pork Shoulder is £2/KG at the mo as well, so got a nice big piece of that for pulled pork at my mate's wrestlemania party :smiley:

Yes, you can actually have silverside rare if you do it correctly, As long as you rest for about 30 mins afterwards

I bought three joints today.
Froze one whole, cut one up into slices and some diced and froze.
I'll cook one on Sunday for a roast and freeze a few slices.
Very popular today in my local Asda and they had plenty, both pre-packed and on the butchers counter. I bought two joints from the butchers counter and a pre-packed nice joint of silverside.

Picked up a few Topside ones today, roasted it covered in a medium oven for 3.5 hours then a half hour rest before slicing. Nice meat for the money. I expect tough as old boots if you fast roast without extra fat. Silverside might be nice for home made salt beef or pot roasts. Also had leg of lamb at £4/kg.

"I know silverside is traditionally a joint more suited to slow cooking/pot roasting because of its composition but my butcher suggested fast roasting it at 220C in a really hot oven for about 40 minutes with about 15-20 minutes resting time which he says should give me a rare but tender and juicy roast.
OK, I just cooked 950g of silverside beef for 40 minutes at 220 C (in a hot oven) after rubbing it liberally with salt, pepper & crushed rosemary. I also poured some sweet Soy (Kicap Manis) over it to add some sweetness. After a strict 40 minutes I took it out and it sat for 30 minutes before carving.
It was perfectly rare, deliciously textured and moist. I'd say your butcher was right!"
