Actually tastes of Sourdough bread too, not like the ones they used to produce. Still none of the supermarkets have the texture right as I think they accelerate the rising process as they can't hang around for hours like the home made stuff.

I believe that rather than let the sourdough do the business they add yeast resulting in a thin crust and a bread that doesn't spring back when you prod it with a finger.
I started my bread off yesterday morning and I don't have an airing cupboard so it proves 'low and slow' will go in the oven at 7am and eaten at 10:30 (50 hours in the making) Oh and the starter is 15 year old Pineapple /Rye. Aren't I a bar steward making you all drool?
